{"id":138,"date":"2015-09-11T18:32:21","date_gmt":"2015-09-11T18:32:21","guid":{"rendered":"https:\/\/misplacedone.com\/thewillards\/?p=138"},"modified":"2018-09-26T12:49:19","modified_gmt":"2018-09-26T12:49:19","slug":"buddy-chicken-pasta-wow","status":"publish","type":"post","link":"https:\/\/thewillards.me\/index.php\/2015\/09\/11\/buddy-chicken-pasta-wow\/","title":{"rendered":"Buddy Chicken Pasta Wow!"},"content":{"rendered":"<p style=\"text-align: center;\">[bg_collapse view=&#8221;button-orange&#8221; color=&#8221;#4a4949&#8243; expand_text=&#8221;Show More&#8221; collapse_text=&#8221;Show Less&#8221; ]<\/p>\n<p>It seems appropriate that the first recipe I post on this site is one of my originals (made it for the first time today for Zoey to celebrate her new gig)<\/p>\n<h5>Preheat oven to 375\u00b0F \/ 190\u00b0C<\/h5>\n<p>Serves: 4<\/p>\n<p>Prep: 15 minutes<\/p>\n<p>Cook: 45 minutes<\/p>\n<p>Total Time: 1 hour<\/p>\n<p>Can pre-make sauce and then lower the last portion of the cooking time to 20 minutes&#8230;<\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li lang=\"en-US\">2 Chicken Breasts, cubed<\/li>\n<li lang=\"en-US\">3\u00a0pounds cherry tomatoes, halved<\/li>\n<li lang=\"en-US\">5\/8\u00a0Cup olive oil<\/li>\n<li lang=\"en-US\">5 garlic cloves, minced<\/li>\n<li lang=\"en-US\">2\u00a0Tbsp balsamic vinegar<\/li>\n<li lang=\"en-US\">1\/4 teaspoon dried crushed red pepper<\/li>\n<li lang=\"en-US\">5\u00a0Tbsp chopped fresh oregano<\/li>\n<li lang=\"en-US\">2 Tbsp chopped fresh basil<\/li>\n<li lang=\"en-US\">1 pound fresh egg pasta<\/li>\n<li lang=\"en-US\">1\/2 cup Kalamata olives<\/li>\n<li lang=\"en-US\">1\/4 cup drained capers<\/li>\n<li lang=\"en-US\">6 ounces feta cheese, crumbled (about 1 1\/4 cups)<\/li>\n<li lang=\"en-US\">2 Tbsp shredded Parmesan cheese<\/li>\n<\/ul>\n<p>Instructions:<\/p>\n<p lang=\"en-US\">Add 2 Tbsp olive oil, 2 Tbsp Vinegar, 2 Tbsp chopped Oregano, 2 Tbsp chopped Basil and chicken cubes to a bowl and set aside to marinade.<\/p>\n<p lang=\"en-US\">Position rack in center of oven and preheat to 375\u00b0F.<\/p>\n<p lang=\"en-US\">Combine tomatoes, 1\/3 Cup oil, garlic crushed and halved, 1 Tbsp vinegar, crushed red pepper, and a pinch of salt\u00a0in a Pyrex baking dish.<\/p>\n<p lang=\"en-US\">Roast until tomatoes are tender and juicy, stirring every 10 minutes or so, about 45 minutes.<\/p>\n<p lang=\"en-US\">While the tomatoes are roasting, pan fry the chicken cubes until just done.<\/p>\n<p lang=\"en-US\">Remove tomato sauce from oven and stir in oregano and cooked chicken.
