Thankfully, Zoey found this recipe and we have used it as our base ever since. One thing to mention, I am writing this recipe as it was found in a Tesco Magazine, where we doctored it, I wrote it as we make it or was a tad more specific than the actual printed recipe. We actually make our rice in a rice cooker and so don&#8217;t follow this method &#8211; **To be truly forthcoming, we would not serve this with rice but use the small baby lettuce leaves as wraps instead.<\/p>\n<h6><strong>Serves:<\/strong> 4<\/h6>\n<h5><strong>Ingredients:<\/strong><\/h5>\n<p>&nbsp;<\/p>\n<ul>\n<li>1Tbsp Sesame Oil<\/li>\n<li>3 Lemon Grass Stalks &#8211; Roughly Chopped<\/li>\n<li>1 Red Onion &#8211; Roughly Chopped<\/li>\n<li>5 Garlic Cloves &#8211; Roughly Chopped<\/li>\n<li>1 Red Chilli &#8211; Deseeded and Chopped<\/li>\n<li>Roughly 1&#8243; Piece Root Ginger &#8211; Grated or Chopped<\/li>\n<li>1 x 633g Pack Turkey Mince (Ground Turkey)<\/li>\n<li>1 Lime &#8211; Juiced<\/li>\n<li>1tsp Chilli Powder<\/li>\n<li>2Tbsp Fish Sauce<\/li>\n<li>2 x 250g Packs Microwaveable Basmati Rice<\/li>\n<li>Handful Mint Leaves<\/li>\n<li>Handful Coriander Leaves<\/li>\n<li>2 Little Gem Lettuces<\/li>\n<\/ul>\n<h5><strong>Directions:<\/strong><\/h5>\n<ol>\n<li>Heat the oil in a large frying pan over a high heat.<\/li>\n<li>Meanwhile, to make the Thai spice mixture, put the roughly chopped lemon grass, red onion and garlic, the deseeded and chopped chilli, and the root ginger into a small food processor. Whizz until you have a course paste.<\/li>\n<li>Add the turkey mince to the hot pan, stirring occasionally until browned. <em>This should take about 5 minutes.<\/em><\/li>\n<li>Add the lime juice to the Turkey, along with the Thai Spice mixture, Chilli Powder and Fish Sauce.<\/li>\n<li>Stir the mixture until everything is thoroughly combined.<\/li>\n<li>Meanwhile, cook the rice following the pack instructions. <em>**We don&#8217;t do this part<\/em><\/li>\n<li>While the rice is cooking, roughly chop the mint and coriander leaves and separate the little gem lettuce leaves.<\/li>\n<li>Stir the herbs into the turkey and serve with the lettuce leaves and rice.<\/li>\n<\/ol>\n<p><em>Again, we don&#8217;t normally serve this with rice but we have added peanuts and cashew nuts on occasion and that was quite good &#8211; I would chop and toast them first when I did it<\/em><\/p>\n<p>[\/bg_collapse]<\/p>\n","protected":false},"excerpt":{"rendered":"<p>[bg_collapse view=&#8221;button-orange&#8221; color=&#8221;#4a4949&#8243; expand_text=&#8221;Show More&#8221; collapse_text=&#8221;Show Less&#8221; ] A close friend of ours is turning 21 again tomorrow and she asked me for this recipe&#8230; Happy Birthday, can&#8217;t wait to see you guys!!!
