Mainly because I can\u2019t stop making (and eating) it: for lunches, dinners, happy hours, and barbecues, and I typically make a solemn promise to several guests that I\u2019ll share the recipe on the blog. So here it is in all it\u2019s ridiculously simple glory. Don\u2019t be alarmed by the fact that a fair amount of mayonnaise is involved, and don\u2019t, I repeat do not, substitute yogurt as some healthy-minded cooks (me) might be tempted to do. And did I mention that it\u2019s highly addictive? Consider this your fair warning\u2026<\/em><\/p>\n<h6><strong>Servings: <\/strong>4<\/h6>\n<h6><strong>Prep Time: <\/strong>5 minutes<\/h6>\n<h6><strong>Cooking Time: <\/strong>20 minutes or so<\/h6>\n<h5><strong>Ingredients:<\/strong><\/h5>\n<ul>\n<li>4 ears of corn, shucked and split in half to form 8 pieces<\/li>\n<li>extra-virgin olive oil &#8211; <em>Buddy suggests enhancing this with garlic olive oil<\/em><\/li>\n<li>garlic salt<\/li>\n<li>1\/3 cup mayonnaise (I prefer classic Hellmann\u2019s)<\/li>\n<li>1 tablespoon sriracha sauce<\/li>\n<li>a bunch of cilantro, roughly chopped<\/li>\n<li>a couple tablespoons chili powder<\/li>\n<li>3 limes, each cut into 6 slices<\/li>\n<li>course flake salt, like Maldon<\/li>\n<\/ul>\n<h5><strong>Directions:<\/strong><\/h5>\n<ol>\n<li>In a small plate, pour a bit of olive oil and roll the corn in it to evenly coat.<\/li>\n<li>Sprinkle all over with garlic salt.<\/li>\n<li>Heat a grill or grill pan to high heat, and grill the corn until slightly charred, about 5 minutes. Turn occasionally to cook on all sides.<\/li>\n<li>In a small bowl, combine the mayonnaise, sriracha and a squeeze of lime juice. Whisk to combine.<\/li>\n<li>When the corn comes off the grill, slather it with the mayonnaise mixture, than sprinkle with cilantro, chili powder and a sprinkle of coarse salt.
